Ok, so, this is for all you people who haven't read the Vampire Academy book series. (Unfortunately, the site doesn't have very much info on the Alchemists. :/ So I'll just tell you what I know.)
The Alchemists are humans who somehow know about the existence of Moroi, Dhampirs, and Strigoi. They're kind of like an organization. All Alchemists are religious. They also have a golden lily-like tattoo on one of their cheeks. Their job is to basically make sure that regular humans don't find out about the vampires. They carry around a potion- or powder, I can't remember -that dissolves Strigoi bodies once they are dead. All Alchemists believe that Moroi, Dhampirs, and Strigoi are evil and creatures of the night.

Dhampirs have originally been born from Moroi mixing with humans. They cannot reproduce with each other or with humans, but only with Moroi. When Dhampirs and Moroi have children together, they come out as standard Dhampirs: half human and half vampire. Since Moroi are the only ones with whom Dhampirs can reproduce, they have to stay close to them. It is in their interest that the Moroi survive. That's how the guardian system started.
Most of the Dhampir men and few Dhampir women train to become guardians. After their graduation they stay with a Moroi who they have to protect from the Strigoi.
Dhampirs have no magical gifts, but they are very strong and can turn into great warriors. Thier reflexes and senses are the same as vampires with strength and endurance from humans. Their strength surpasses both humans and Moroi. They heal faster then humans do. Rose states this when she sees a human feeder who had scars on her neck from years of Moroi bites she then goes on to say hers are healed and gone after a day or so. They feed the same way as humans do and have no problems being out in the sun. Their looks are human, too though they are described as being more attractive then humans. They are not as powerful as the Strigoi so they have to train very hard to increase their strength, speed and stamina.
There are only few long-term Moroi-Dhampir relationship because most Moroi want to have Moroi children. Many Moroi men like being with Dhampir women, but in the end marry Moroi women. That's why there are a lot of single Dhampir mothers.
Plenty of Dhampir women do not become guardians because they want to raise their children. They either work normal jobs or live in communities that have a very bad reputation. It is said that they let Moroi men bite them during sex. For that reason they are called "blood whores".
There are also Dhampirs who have a long-term relationship with another Dhampir, which is considered scandalous. It is seen as a waste and disgrace because they cannot have children and neglect their duty of protecting Moroi.

It is common for a Moroi to specialize in one of the elements: air, fire, earth, water or spirit. The element spirit being forgotten for a long time. Moroi, who having specialized in the spirit element, were thought to have not specialize at all. Moroi are not allowed to use their abilities as offensive, only defensive. This is why they want Dhampirs as guardians to protect them. Though it is known that in the past, moroi used to fight along side with their dhampirs guardian (using their ability both offensive and defensive). The users of water, fire, earth and air are drawing their powers from each element. Only spirit users are drawing their powers from their mind and body.
A Moroi's diet consist of blood as well as normal food. They can survive on either, but blood is more important to them. Usually the school they attend have provides human feeders for them to have daily feedings. Moroi bites contain endorphines and many of the feeders are addicted to the bites. The longest a Moroi can go without blood is two days. After which after they start to weaken. Signs of this are their already pale skin becomes even paler, dark circles under their eyes, and their strength beginning to wane.

There are two ways to make a Strigoi: If a Strigoi drinks blood from his victim and then forces that person to drink Strigoi blood then he or she becomes a Strigoi. The other way to become Strigoi is by choice, if Moroi purposefully kills another person while feeding. A Moroi that turns Strigoi loses his or her magical ability and can no longer go into the sunlight or church.
Strigoi are very strong physically and incredibly fast. A Strigoi's strength and immortality stemming from their diet of Moroi blood; It is Moroi blood that makes them so powerful. They easily surpass an un-trained Dhampirs skill level. Inexperienced or novice Dhampirs wont stand much chances against them, only those that are exceedingly well trained (like Rose) can hope to match or even defeat them. Their senses are even sharper than those of Dhampirs and Moroi. Their saliva, when feeding gives the feeder an even stronger high then a moroi's, leaving the feeder fatigued and utterly clueless. Giving hint that their bites contain even higher endorphins. A Strigoi's movements are noticabley graceful.
When a Strigoi is first made, they are awkward with their strength and speed but as time goes by they get used to their new skills and become even more deadly.
A Strigoi's thirst for blood is stronger then a Moroi's is for human blood, but can be satiated with human, Dhampir or Moroi blood. Moroi blood however is what they truly crave and desire the most since it is Moroi blood that gives them so much power.
While there are three ways to kill a Strigoi, a silver stake through the heart, decapitation, or setting them on fire, there is only one way to save them. A silver stake must be charmed with Spirit and then a Spirit user, being the only ones who "can create life" with their magic, must then stake the Strigoi through the heart, this is seen in Spirit Bound where Lissa stakes Dimitri Belikov in the heart thus restoring him to his original state, (a dhampir).
